Gingerbread houses are a staple of late autumn in the US, but they can be fun year-round, too. Kits for making houses are popular during the holiday season but building a house from scratch really only requires a few basic materials that you can easily make or already have in your pantry.
The foundation for the house and the walls is, of course, gingerbread. There are many different recipes available on the internet for gingerbread: you are looking for recipes that do not include either baking soda or powder. The end product should be thin, stiff, and rock hard. A standard gingerbread recipe will do: just leave out any leavening agents and bake a little longer than is called for in your recipe.
Icing is used as mortar and this does require some patience, as it takes some time for the icing to harden up and provide a good bond. As a general rule, don’t add more than one story to your masterpiece per day: let the previous level dry overnight and continue building the next day.
Once you have your basic structure in place, it’s time to decorate: jelly beans, marshmellows, cookie crumbles, spices, almost anything you can think of will work. I personally love to use up that leftover halloween candy.
For architectural inspiration, I tend to look at pictures of buildings in Europe, just because they have very classical lines. The last gingerbread house my family made, for example, was based on a picture of a church in Krakow.
